    Scrape off the scales from the hairtail, clean and cut it into sections, then make 3 to 4 shallow slashes in each piece.

    Finely chop the green onion.

    Mix the gochujang, onion, green onion, minced garlic, soy sauce, plum extract, chili powder, minced ginger, and pepper to make the seasoning sauce.

    Heat the brown rice oil in a pan and lightly grill the hairtail on both sides.

    Brush the partially grilled hairtail with the gochujang seasoning and continue grilling.

    Finish by sprinkling with sesame seeds.

Ingredient substitutions

Gochujang
Combine miso, gochugaru, and a little sweetener for a functional substitute. It will not reproduce the same fermented flavor.
Onion
Shallot or leek works with a different aroma.
Green onion
Chives or a small amount of leek can work, with a different flavor.
Garlic
Garlic powder works in a pinch but lacks fresh aroma.
Soy sauce
Tamari works, though saltiness differs.
