    Soak the beef short ribs in cold water to draw out the blood.

    Blanch the ribs in boiling water.

    Add the shiitake mushroom, green onion, garlic, onion, and ginseng to cold water, then add the blanched ribs and simmer for about 2 hours to make the soup.

    Mix the low-sodium soy sauce with the sugar to make a dipping sauce for the meat.

    Soak the glass noodles in hot water and add them just before serving the soup.

    Separate the egg into yolk and white, cook each into thin egg sheets, and place them on top of the finished soup with the jujubes.

Ingredient substitutions

Beef
Mushrooms or chicken can replace it with a different result.
Sweet potato glass noodles
Mung bean glass noodles are thinner and softer.
Mushroom
Any mild mushroom can work.
Egg
For binding, use a commercial egg replacer or a small starch slurry; the flavor and texture will change.
Jujube
Dried dates provide sweetness but are softer and more caramel-like.
