Cut the zucchini into half-moon slices.
Lightly salt the sliced zucchini, let it sit briefly, then remove the excess moisture.
Julienne the onion, quarter the green onion lengthwise, and slice the red chili diagonally, allowing the seeds to fall out naturally.
Heat the perilla oil in a pan and stir-fry the garlic first.
Add the dried shrimp to the pan and stir-fry.
Once the dried shrimp are stir-fried, add the sliced zucchini and cook. Add the onion and green onion, then stir in the ground perilla seeds and cook briefly. Add the sliced red chili at the end and stir-fry once more to finish.
