    Combine the prepared ingredients with the potato starch liquid, sugar, garlic, and ginger to make the water kimchi.

Ingredient substitutions

Asian pear
Apple or a little fruit juice adds sweetness and moisture with a different aroma.
Red chili pepper
Use a mild red pepper or a small amount of chili flakes; heat will vary.
Potato
Korean radish gives a lighter texture.
Sugar
Honey or rice syrup works with a small texture change.
Garlic
Garlic powder works in a pinch but lacks fresh aroma.
