    Wash the whole bellflower roots and peel them.

    Soak the bellflower roots in salted water to draw out the bitterness, then drain well.

    Split each bellflower root in half and pound it with a mallet until thin and broad.

    Make the seasoning sauce with grated pear, minced garlic, gochujang, soy sauce, and sesame oil.

    Grill the bellflower roots in a pan until they begin to cook, then brush with the seasoning sauce and grill again over low heat.

    Finish by sprinkling with chives and sesame seeds.

Ingredient substitutions

Asian pear
Apple or a little fruit juice adds sweetness and moisture with a different aroma.
Garlic
Garlic powder works in a pinch but lacks fresh aroma.
Green onion
Chives or a small amount of leek can work, with a different flavor.
Sesame seeds
Omit if necessary; the dish loses some aroma.
Gochujang
Combine miso, gochugaru, and a little sweetener for a functional substitute. It will not reproduce the same fermented flavor.
