Korean kimchi stew with tofu and pork

Ingredients

  • Kimchi2 cups aged kimchi with 1/4 cup juice
  • Pork6 ounces pork shoulder or belly, sliced
  • Tofu8 ounces firm tofu, sliced
  • Waterpantry3 cups water
  • Garlic1 teaspoon minced garlic
  • Gochugaru1 tablespoon gochugaru
  • Soy saucepantry1 teaspoon soy sauce, or to taste
  • Green onionoptional1 green onion, sliced

Instructions

    Put the kimchi, kimchi juice, pork, garlic, and gochugaru in a pot. Cook over medium heat for 5 minutes.

    Add the water, bring to a boil, then reduce to a steady simmer for 20 minutes.

    Add the tofu and simmer for 5 minutes more. Taste before adding soy sauce, then finish with green onion.

Ingredient substitutions

Kimchi
There is no exact substitute. Sauerkraut plus gochugaru can provide acidity and crunch, but the flavor will be different.
Pork
Chicken thigh or mushrooms can work, but the flavor changes.
Tofu
Use the closest available tofu texture. The result may be more fragile or firmer than intended.
Water
Broth adds more flavor where appropriate.
Garlic
Garlic powder works in a pinch but lacks fresh aroma.
