    Wash the rice thoroughly, add about twice its volume of water, and soak for about 30 minutes.

    Use a spoon to separate the abalone from the shell, then remove and set aside the innards.

    Wash the cleaned abalone thoroughly and slice it.

    Remove the tails from the shrimp and chop the shrimp into small, textured pieces.

    Peel the button mushrooms and chop them into small pieces. Cut the carrot into pieces about the same size as the mushrooms.

    Heat the sesame oil in a pot and gently stir-fry the abalone. Add the soaked rice and stir-fry, then add water and simmer for about 20 minutes. Once the porridge is boiling, add the shrimp, mushrooms, and carrot and cook for about 20 minutes more, stirring gently. When everything is well combined, top with pine nuts and serve with low-sodium soy sauce.

Ingredient substitutions

Rice
Medium-grain rice works well. Long-grain rice is usable but gives a drier, looser texture.
Shrimp
Firm white fish or mushrooms can work, with a different texture and flavor.
Mushroom
Any mild mushroom can work.
Carrot
Bell pepper adds color but a different flavor.
Toasted sesame oil
Perilla oil is different but works in some Korean dishes.
