    Boil the noodles according to the package until chewy-tender. Drain, rinse briefly, and cut once or twice with kitchen scissors.

    Blanch the spinach, squeeze dry, and season lightly. Stir-fry the beef, carrot, onion, and mushrooms separately.

    Return the noodles to a large skillet with soy sauce and sugar. Toss over medium heat until the liquid is absorbed.

    Fold in the cooked fillings and sesame oil. Taste and adjust before serving warm or at room temperature.

Ingredient substitutions

Sweet potato glass noodles
Mung bean glass noodles are thinner and softer.
Beef
Mushrooms or chicken can replace it with a different result.
Spinach
Swiss chard or bok choy works with a different texture.
Carrot
Bell pepper adds color but a different flavor.
Onion
Shallot or leek works with a different aroma.
