
Abalone Rice Porridge(전복죽)

A thick red bean porridge made with softened red beans, soaked glutinous rice, and chewy glutinous rice balls, with optional sugar or honey.

Rinse the glutinous rice and soak it in water.
Rinse and drain the red beans, then add enough water to cover them and bring to a boil.
When the water turns dark reddish, discard it. Add about three times the volume of the red beans in fresh water and boil until the beans are completely soft and breaking down.
Mix the glutinous rice flour with boiling water to make a partially cooked dough, then shape it into glutinous rice balls about 1.5 cm in diameter.
Mash the cooked red beans by hand, then strain them through a sieve and let the sediment settle. Bring the clear upper liquid to a boil first, add the soaked glutinous rice, and cook until the grains are fully softened and expanded.
Add the settled red bean paste and then the glutinous rice balls. Once the balls float to the surface, cook for another 2 to 3 minutes to finish. Add sugar or honey according to taste.
