    Peel the taro with a vegetable peeler and cut each piece into 3 to 4 sections.

    Cut the beef and Napa cabbage into 5 mm-wide strips, and slice the green onion diagonally.

    Soak the taro in lightly salted water made with 1 cup of water and 1 g of salt.

    Sauté the beef and minced garlic in sesame oil. Once fragrant, add the red pepper flakes and sauté briefly.

    Pour water into the sautéed beef and dissolve the soybean paste into the broth.

    Once the broth comes to a boil, add the Napa cabbage, taro, and green onion and bring everything to a brief boil.

Ingredient substitutions

Beef
Mushrooms or chicken can replace it with a different result.
Napa cabbage
Bok choy or green cabbage can work in some cooked dishes, but texture and water content differ.
Garlic
Garlic powder works in a pinch but lacks fresh aroma.
Gochugaru
Aleppo pepper is a gentler substitute; crushed red pepper works but is usually sharper and hotter.
Doenjang
Red or awase miso is the closest common substitute, but it is usually sweeter and less pungent.
