    Remove the veins from the shrimp, peel them, and rinse thoroughly.

    Place the shrimp and ginger in a steamer and steam for about 5 minutes.

    Slice the garlic into thin flat pieces, and coarsely chop the carrot, onion, green onion, perilla leaves, green chili pepper, and jujubes.

    Trim off the tails of the mung bean sprouts and briefly blanch them in boiling water.

    Add cooking oil to a pan, then add the prepared vegetables and stir-fry.

    Add the cooked rice and shrimp and stir-fry, then add the low-sodium soy sauce and continue stir-frying to finish.

Ingredient substitutions

Rice
Medium-grain rice works well. Long-grain rice is usable but gives a drier, looser texture.
Carrot
Bell pepper adds color but a different flavor.
Perilla leaves
Use shiso when Korean perilla leaves are unavailable. Start with a little less because shiso has a brighter aroma.
Onion
Shallot or leek works with a different aroma.
Jujube
Dried dates provide sweetness but are softer and more caramel-like.
