A clear, spicy beef soup made with shredded brisket, seasoned fernbrake, radish, onion, scallions, enoki mushrooms, and Cheongyang chilies.

    Make the broth with the broth ingredients, strain it through a sieve, and shred the beef brisket.

    Cut the radish and onion into thick strips.

    Slice the white part of the scallion diagonally and cut the green part into large pieces.

    Blanch the fernbrake in hot water, cut it into bite-size pieces, and season it with the fernbrake seasoning.

    Slice and stir-fry the Cheongyang chilies, then add them to the prepared broth.

    Add all the ingredients to the broth, bring it to a boil once, and serve.

Ingredient substitutions

Korean radish
Daikon is the closest common option; it may be milder or more watery.
Green onion
Chives or a small amount of leek can work, with a different flavor.
Onion
Shallot or leek works with a different aroma.
Mushroom
Any mild mushroom can work.
Salt
Soy sauce can add saltiness but also changes color and flavor.
