    Mince the green onion and garlic.

    Add water and salt to a pot and bring to a boil.

    Blanch the washed spinach.

    Rinse the blanched spinach in cold water, squeeze out excess moisture, and cut into bite-size pieces.

    Toss the spinach with the ground perilla seeds, green onion, garlic, sesame seeds, and perilla oil.

    Transfer to a plate and serve.

Ingredient substitutions

Spinach
Swiss chard or bok choy works with a different texture.
Green onion
Chives or a small amount of leek can work, with a different flavor.
Garlic
Garlic powder works in a pinch but lacks fresh aroma.
Perilla seed powder
Ground sesame can add nuttiness, but the aroma and thickness will differ.
Sesame seeds
Omit if necessary; the dish loses some aroma.
