Soft potato and rice are mixed with vegetables and anchovies, shaped into bite-size balls or triangles, and coated with egg yolk and sesame seeds.

    Wash the potato thoroughly, steam it in a steamer, peel it, and press it through a sieve.

    Heat an oiled pan and sauté the minced carrot, seasoning it with salt. Trim and blanch the spinach, rinse it in cold water, squeeze out the excess water, and finely chop it.

    Lightly toast the dried baby anchovies in a pan, then roughly chop them.

    Place the ingredients from steps 1, 2, 3, and 4 in a bowl, add salt, white pepper, and sesame oil, and mix well.

    Press the cooked egg yolk through a sieve.

    Shape the mixture from step 4 into rounds or triangles, then roll them evenly in the egg yolk, black sesame seeds, and white sesame seeds to coat.

Ingredient substitutions

Potato
Korean radish gives a lighter texture.
Rice
Medium-grain rice works well. Long-grain rice is usable but gives a drier, looser texture.
Carrot
Bell pepper adds color but a different flavor.
Spinach
Swiss chard or bok choy works with a different texture.
Dried anchovy
Use anchovy broth or a small amount of fish sauce; the result will differ.
