Remove the tips from the pine nuts, then rub them with a damp cloth to wipe away any dust.

  2. 2

Soak the walnuts in lukewarm water and remove the skins.

  3. 3

Cut around the jujubes in thin spirals and finely chop the flesh.

  4. 4

Put the corn syrup and sugar in a pot, add a little water, and cook over low heat until the syrup becomes clear.

  5. 5

Add the chopped jujubes and syrup to the pine nuts, walnuts, and sesame seeds, and mix until the mixture clumps together.

  6. 6

While still slightly hot, shape the mixture into round balls by hand.

Ingredient substitutions

Pine nuts
Chopped walnuts add richness with a different texture.
Walnuts
Pecans or almonds work as a crunchy nut, with a different flavor.
Jujube
Dried dates provide sweetness but are softer and more caramel-like.
Sesame seeds
Omit if necessary; the dish loses some aroma.
Sugar
Honey or rice syrup works with a small texture change.
