    Thinly slice the potato and onion, cut the oyster mushrooms, and grill them in a heated pan.

    Pour the water into a pot and dissolve the soybean paste in it. Add the potato, onion, and tofu and simmer until the vegetables turn translucent. Remove the solids, blend them in a blender, return the mixture to the soup, and bring it to a boil again.

    Add the grilled oyster mushrooms and green onion, bring the soup to a boil, and serve in a bowl.

Ingredient substitutions

Doenjang
Red or awase miso is the closest common substitute, but it is usually sweeter and less pungent.
Tofu
Use the closest available tofu texture. The result may be more fragile or firmer than intended.
Mushroom
Any mild mushroom can work.
Potato
Korean radish gives a lighter texture.
Onion
Shallot or leek works with a different aroma.
