    Make shallow cuts in the pork shoulder.

    Coat the pork with the soybean paste, ginger powder, minced garlic, whole peppercorns, and bay leaf, then let it marinate.

    Cut the onion and green onion into large pieces.

  4. 4

    Arrange the onion and green onion over the bottom of a pot or oven-safe dish.

  5. 5

    Place the marinated pork on top of the vegetables from step 4 and cook for about 50 minutes until fully cooked through.

    Slice the pork 0.5 cm thick and serve.

Ingredient substitutions

Pork
Chicken thigh or mushrooms can work, but the flavor changes.
Onion
Shallot or leek works with a different aroma.
Green onion
Chives or a small amount of leek can work, with a different flavor.
Doenjang
Red or awase miso is the closest common substitute, but it is usually sweeter and less pungent.
Black pepper
White pepper is usable but tastes different.
