
Abalone Rice Porridge(전복죽)
A rich rice porridge simmered with abalone, shrimp, mushrooms, and carrot, finished with pine nuts and served with low-sodium soy sauce.

Brown rice and short-grain rice are cooked with crown daisy and wild chives, then served with a mild tofu sauce made with gochujang, doenjang, and kelp broth.

Soak the brown rice for about 1 hour and the short-grain rice for about 30 minutes, then combine them.
Separate the stems and leaves of the crown daisy and wild chives, and cut them into 1 cm lengths.
Place the stem portions of the crown daisy and wild chives in a pot with the soaked rice, add the appropriate amount of water for cooking rice, bring to a boil over high heat, then reduce to medium-low and cook for 15 minutes.
Reduce to low heat and let the rice finish steaming.
Finely blend all the tofu sauce ingredients except the kelp broth in a blender. Transfer to a pan, add the kelp broth and the reserved leafy portions of the greens, and bring to a boil to make the tofu sauce.
Serve the spring greens rice with the tofu sauce.
